Oh my God do this. If you like Asian food and are after a healthy, filling dish... oh my God do this. Seriously. DO IT NOW!!!

Spicy shredded chicken salad

Chicken breast, cooked and shredded
2 cucumbers, cut into matchsticks
4 celery stalks, cut into matchsticks
red onion, sliced
fresh chopped coriander (it's called cilantro in the USA if I recall correctly.)
1 or 2 diced chillies, seeds removed
1 tablespoon soy sauce
2 teaspoons sesame oil
rice vermicelli noodles, cooked and drained.

Place chicken, vegetables, chillies, coriander and noodles in a large bowl. Toss well.

Combine soy sauce and sesame oil in a small bowl. Stir to combine. Pour over salad. Serve sprinkled with more coriander.

Seriously, it's trhat simple, but SO FREAKING DELICIOUS that Rowan and I were having mouth gasms all night long. It's alos surprisingly filling for a salad, and so fresh and tangy and delicious, and best of all healthy to boot....
